White beans and kale

Quick and easy vegan lunch!

Servings 2

Ingredients
  

  • 2 T olive oil
  • 1 onion chopped
  • 2 cloves garlic pressed
  • 1 t oregano
  • 1/2 c white beans
  • 1 c kale chopped
  • 2 T Parmesan cheese grated

Instructions
 

  • Saute onion and garlic in olive oil. Add oregano.
    2 T olive oil, 1 onion, 2 cloves garlic, 1 t oregano
  • Add beans and water. Bring to a boil while stirring, reduce heat to simmer, and cover.
    1/2 c white beans
  • Cook till beans are soft. Season to taste and continue cooking till thick.
  • Stir in kale.
    1 c kale
  • Once the kale is wilted, sprinkle on Parmesan and serve.
    2 T Parmesan cheese

Notes

Serve with a side of cabbage and crusty whole grain bread.
