White beans and kale

olive oil

garlic

oregano

white beans

kale
chopped

Parmesan cheese
grated
Instructions
Saute onion and garlic in olive oil. Add oregano.
2 T olive oil,
1 onion,
2 cloves garlic,
1 t oregano
Add beans and water. Bring to a boil while stirring, reduce heat to simmer, and cover.
1/2 c white beans
Cook till beans are soft. Season to taste and continue cooking till thick.
Stir in kale.
1 c kale
Once the kale is wilted, sprinkle on Parmesan and serve.
2 T Parmesan cheese
Notes
Serve with a side of cabbage and crusty whole grain bread.
