White beans and kale
Quick and easy vegan lunch!
Ingredients
- 2 T olive oil
- 1 onion chopped
- 2 cloves garlic pressed
- 1 t oregano
- 1/2 c white beans
- 1 c kale chopped
- 2 T Parmesan cheese grated
Instructions
- Saute onion and garlic in olive oil. Add oregano.2 T olive oil, 1 onion, 2 cloves garlic, 1 t oregano
- Add beans and water. Bring to a boil while stirring, reduce heat to simmer, and cover.1/2 c white beans
- Cook till beans are soft. Season to taste and continue cooking till thick.
- Stir in kale.1 c kale
- Once the kale is wilted, sprinkle on Parmesan and serve.2 T Parmesan cheese
Notes
Serve with a side of cabbage and crusty whole grain bread.
